A menu inspired by the seasons, by the farmers, by the fishermen, and by our talented team of chefs. Paul and James strongly believe where the food comes from and how it is purchased, cultivated, grown and harvested is as important as its presentation and preparation. Our menu is focused on regionally and locally grown or sustainable resources. The food chain starts with the farmer, then on to our chefs where the creations begin. “A menu that boasts the best in farm to table cuisine” means our menu will evolve through the seasons and follow the harvests. The Capital District and Hudson Valley have many offerings to choose from–artisanal cheese makers, organic farmers, mushroom foragers, winemakers and more. Whenever possible we will source our ingredients from the area and expand to regional waters for sustainable fresh fish and shellfish.
