Chef Paul Dimm and James Warren welcome you to The Scarlet Knife. From farm to table, our seasonal menu honors the journey of our ingredients. We strongly believe where food comes from, how it is purchased, cultivated, grown and harvested is as important as its presentation and preparation.
The Capital District and Hudson Valley have many offerings to choose from– artisanal cheese makers, organic farmers, mushroom foragers, winemakers and more. Whenever possible we will source our ingredients from the area and expand to regional waters for sustainable fresh fish and shellfish.
Choose your dining experience — Chef's Counter, in our spacious dining room, outdoor seasonal patio—or indulge in a unique dessert experience in our dessert room. And on select nights we have live music too!
With over 150 bottles of wine on our menu, we're honored to have received the Wine Spectator's Award of Excellence for our exceptional wine selection.
