Bringing a dream to reality, brothers-in-law Executive Chef Paul Dimm and Wine Aficionado James Warren operate the family-owned Scarlet Knife with a mission to regionally source food, offer seasonally harvested menus, and create a unique culinary & wine experience in an atmosphere enhanced by the arts. Paul is an alumnus of The Culinary Institute of America and has honed his culinary skills working with the best industry chefs in upscale establishments in NY, NJ, VT, CO and TN. Paul and his family are happy to be settled in upstate NY offering a beautiful gathering venue, seasonal dining, and a great place to work.
