In December of 2020, James Warren, a 20+ year resident of Latham decided to team up with his brother-in-law, Paul Dimm to fulfill a long-shared desire to open a premier restaurant in the Capital Region. Paul is a graduate of The Culinary Institute of America, Hyde Park where he studied under some of the best chefs in the industry. Early in his career, Paul moved throughout the country to work in places such as Aspen, CO and The Grand Ole Opry & Opryland Hotel in Nashville where he honed his culinary skills before settling in New Jersey with his family.
Josh grew up on a small family farm in Vermont where he enjoyed eating ingredients straight from the family gardens. Josh attended Johnson & Wales University; Denver Campus then moved to Providence Rhode Island where he fell in love with the amazing culinary scene. In 2016, Rhode Island Eats featured Josh as one of their up and coming Top 25 Chefs in New England. Josh has been in the upstate NY area for the last 5 years where he has focused on farm to table cuisine, allowing him to bring passion and creativity to the local area.
Jenny grew up locally in Voorheesville, NY, not far from Scarlet Knife. She has been working as a Pastry Chef in the Saratoga area for over a decade. Jenny has a passion for pastry and loves to try new techniques to grow and enhance her skills. All Jenny’s menu items are made from scratch and spotlight the freshest seasonal ingredients available.
Alex studied at Johnson & Wales University, Providence campus and has worked her way up through the industry where she was most recently Director of Restaurants at the prestigious Sagamore Resort in upstate NY. While Alex has spent most of her career in New York, she has traveled all over the east coast for work, including Florida, Maine and Rhode Island and has worked at some of the oldest and well-known restaurant groups in Manhattan, such as Alicart Restaurant Group and PJ Clarke’s. Alex is originally from Westchester County and resides in Saratoga Springs with her dog.
