In December of 2020, James Warren, a 20+ year resident of Latham decided to team up with his brother-in-law, Paul Dimm to fulfill a long-shared desire to open a premier restaurant in the Capital Region. Paul is a graduate of The Culinary Institute of America, Hyde Park where he studied under some of the best chefs in the industry. Early in his career, Paul moved throughout the country to work in places such as Aspen, CO and The Grand Ole Opry & Opryland Hotel in Nashville where he honed his culinary skills before settling in New Jersey with his family.

Pastry Chef

Julia began her career in baking at the Culinary Institute of America, studying Baking and Pastry Arts as well as Business Management, graduating Valedictorian of her class. Over the past 5 year, her passion for Farm-to-Table desserts grew, and she expanded her knowledge in restaurants in New Jersey, Connecticut, and New York. Julia loves to take familiar desserts and add her own twist to make them elevated, and one-of-a-kind.

Alexandra Sisca

General Manager

Alex studied at Johnson & Wales University, Providence campus and has worked her way up through the industry where she was most recently Director of Restaurants at the prestigious Sagamore Resort in upstate NY. While Alex has spent most of her career in New York, she has traveled all over the east coast for work, including Florida, Maine and Rhode Island and has worked at some of the oldest and well-known restaurant groups in Manhattan, such as Alicart Restaurant Group and PJ Clarke’s. Alex is originally from Westchester County and resides in Saratoga Springs with her dog.
