Bringing a dream to reality, brothers-in-law Executive Chef Paul Dimm and Wine Aficionado James Warren operate the family-owned Scarlet Knife with a mission to regionally source food, offer seasonally harvested menus, and create a unique culinary & wine experience in an atmosphere enhanced by the arts. Paul is an alumnus of The Culinary Institute of America and has honed his culinary skills working with the best industry chefs in upscale establishments in NY, NJ, VT, CO and TN. Paul and his family are happy to be settled in upstate NY offering a beautiful gathering venue, unique farm-to-table dining, and a great place to work.

Damian Cross

Beverage Manager

Damian was born and raised in Latham, NY, before leaving for Las Vegas at 22 years old. Working for Celebrity Chef's Mary Sue Milliken & Susan Feniger at Border Grill in Mandalay Bay. From there he oversaw the bar at CUT Las Vegas with The Wolfgang Puck Fine Dining Group, honing skills & knowledge in fine dining, wine, & spirits. Shortly thereafter, he went to work for Steve Wynn at Wynn & Encore Las Vegas and eventually Station Casinos creating craft cocktails and managing the innovation for 20+ bars in the portfolio. After nearly 17 years away from home, Damian is excited to bring passion and knowledge back to his hometown.
