Bringing a dream to reality, brothers-in-law Executive Chef Paul Dimm and Wine Aficionado James Warren operate the family-owned Scarlet Knife with a mission to regionally source food, offer seasonally harvested menus, and create a unique culinary & wine experience in an atmosphere enhanced by the arts. Paul is an alumnus of The Culinary Institute of America and has honed his culinary skills working with the best industry chefs in upscale establishments in NY, NJ, VT, CO and TN. Paul and his family are happy to be settled in upstate NY offering a beautiful gathering venue, unique farm-to-table dining, and a great place to work.

Carly Yezzo
Sous Chef
After graduating from SUNY Delhi with a Culinary Arts Management degree and starting her journey cooking in a few restaurants in the Capital Region, Carly was thrilled to join the SK team when the restaurant launched. She has grown her hard-working and talented team and takes great pride in the amazing from-scratch culinary dishes they collectively serve-up. While in school, Carly participated throughout the world in food competitions. This passion to always try new flavors, combined with opportunity to work with Chef Paul, the freedom to explore her knowledge, and the partnership with local farmers produces ever-changing, unique and delicious seasonal menus she loves serving to guests.

Alexandra Sisca
General Manager
Alex joined SK prior to opening for the opportunity to grow the team, organize operations, and manage events. She also shares the family’s commitment to work with regional food producers and local artists in creating an amazing guest experience and a great place to work! Alex studied hospitality at Johnson & Wales University and began her career working in RI, ME, and FL before returning home to NY to work at two well-known Manhattan restaurants. Her last career stop moved her to Saratoga Springs with her pup to become the Director of Restaurants at the Sagamore Resort, Lake George. Now at SK, Alex’s passion for music keeps the stage booked with local performers.
