Plans to convert former Latham Kmart into large, ‘upscale’ restaurant

LATHAM — The old Kmart is gone, but a new restaurant coming in its place will pay a special homage to the former retail superstore.

Paul Dimm, a New Jersey chef, has big plans for the 15,000 square foot space at 195 Troy Schenectady Road — a modern-day restaurant called the Scarlet Knife.
